Tofu – 8 oz (extra firm)

Peanuts – ½ cup

Garlic -2 clove

Cumin seeds – 1 tsp

Green chillies- 4-5

Cilantro – 1 bunch (2 cups)

Oil – 1 tsp (optional)

Directions

1. Prepare the Filling

Start by dry-roasting half a cup of peanuts in a pan over medium heat for about four minutes. Add a teaspoon of cumin seeds and roast for another minute. Then, toss two garlic cloves and 4-5 green chilies, roasting for an additional two minutes. Let the mixture cool for 5-7 minutes. Once cooled, combine the roasted mixture with fresh cilantro in a food processor. Add salt to taste and blend until roughly mixed.

  1. Prepare the Tofu

Pat an 8-ounce block of extra-firm tofu dry to remove excess water and cut it into ten blocks. Slit each block carefully to create a pocket and stuff it with the peanut filling.

Heat a pan and lightly smear it with a teaspoon of oil using a silicone brush. Place the stuffed tofu blocks in the pan and cook on each side until golden brown. For an oil-free version, you can dry roast the tofu instead.
