The traditional Kenyan dish, Githeri, inspires this nutritious and Hearty Bean and Corn Stew. It's a flavorful one-pot meal with wholesome, delicious, nourishing ingredients. This stew perfectly balances taste and health benefits with a mix of kidney beans, vegetables, and aromatic spices. Ingredients





-          1/2 cup raw kidney beans (soaked and cooked) or one can (rinsed thoroughly)

-          1 cup frozen corn

-          1 large onion

-          1-inch piece of ginger (minced)

-          3-4 garlic cloves (minced)

-          2 carrots

-          2 medium tomatoes

-          1 potato

-          2 cups chopped kale (or any green of your choice)

-          1 bunch of cilantro

-          1/2 tsp coriander powder

-          1/2 tsp cumin powder

-          1/2 tsp turmeric powder

-          1/2 tsp black pepper powder

-          1/2 tsp cayenne pepper or chili powder

-          1/2 tsp garam masala (optional)

-          Salt, to taste

-          1 1/2 tbsp oil or vegetable broth (if you are avoiding oil altogether)

 

Directions

1. Heat a heavy-based stainless steel pot and add oil or vegetable broth. Sauté the onion for 5 minutes.



2. Add minced ginger and garlic and sauté for 3 minutes.



3. Add chopped tomatoes and sauté for 2 minutes.


4. Add all the spices and salt. Sauté for 2 minutes.








5. Add potatoes and carrots, mix thoroughly, and cover for 5 minutes.






6. Add cooked beans, corn, and kale. Mix thoroughly, add 1 cup of hot water, and cover. Let it simmer for 15-17 minutes or until the potatoes are cooked. Then, switch off the stove.












7. Place 4-5 chunks of potatoes in a small bowl and mash them with a fork. Transfer the mixture back to the stew to thicken it. You can skip this step if you prefer a watery consistency.







8. Garnish your stew with fresh cilantro and enjoy!
