Ingredients

Adjuki beans – ½ cup soaked

Barley – ½ cup soaked

Green mix – 2 cups

Cucumber- 1 cup (diced)

Red onion – ¼ cup

Cherry tomatoes – ½ cup(halved)

Raspberry – 6 oz

Yellow mustard powder – 1 tsp (ground)

Black pepper powder – ½ tsp

Maple syrup/ Honey – 1 tbsp

Balsamic vinegar/ white vinegar – 1 tbsp

Pumpkin seeds – handful

Pecans – 1/ 4 cup (optional)

Directions

1. Cook the Barley: Combine ½ cup of barley with 1.5 cups of water on the stovetop. Cook for 12-15 minutes, or follow the instructions on the package.

2. Prepare the Adzuki Beans: Soak the adzuki beans in a pressure cooker. Add 1 cup of water and a pinch of salt, then cook for three whistles. If using an Instant Pot, cook on high pressure for 10 minutes. After cooking, let the pressure release naturally for 10 minutes before manually releasing any remaining pressure.

 

3. Make the Raspberry Vinaigrette: In a blender, combine ½ cup of raspberries, mustard, black pepper, maple syrup or honey, olive oil, and a little water. Blend until smooth.

4. Assemble the Salad:  In a large bowl, combine the cooked barley, adzuki beans, cucumber, red onion, tomatoes, and fresh raspberries.

5. Toss and Serve: Drizzle the raspberry dressing over the salad and toss gently to coat. Top with pumpkin seeds and pecans before serving.

(Tip - If you find raspberries too tangy, use them in a vinaigrette and omit adding them in the salad.)
